A wide range of specialized accessories enables configuration for almost any baked product, product range and operating process.

High output thanks to high-performance guillotine

The high-performance guillotine ensures a high output. The travelling movement ensures that the dough pieces are cut accurately and maintain their shape. Separate tables prevent soft dough pieces from sticking together. In croissant production, the triangles are punched and turned in a single process step, as is usual at FRITSCH. This process is extremely gentle on the dough and ensures a high level of accuracy in terms of shape, position and weight.

Coiling systems

A croissant defines itself by its taste; however, its appearance also plays a major role in the development of the overall impression. Our coiling units will provide you with numerous options to lend your coiled products an individualized structure.

CSV compact - for filled and unfilled croissants:
The CSV compact offers you maximum flexibility: you can coil filled and unfilled products with a single system. This shortens the time needed to change the components and also saves valuable space. The CSV compact fixes the dough pieces from below with a vacuum so that a precise coiling process and perfect coiling results are guaranteed every time. The exchangeable coiling cassettes offer a high level of flexibility for different products.

Artisan and semi-automatic production 

In the simplest case, the MULTIFLEX L 700 is fed using a ROLLFIX. However, dough feeding can of course also be automated. In this case, a continuous dough sheet is produced using a FRITSCH DOUGHLINER 700 or LAMINATOR 700. In the case of a combination of sheeting line and MULTIFLEX L 700, we speak of a PROGRESSA prime.
