Innovative cooling and proofing technology
The secret is the long, cool fermentation: the SLOWPROOFER works with a particularly gentle slow fermentation process - without skinning or dehydration. The dough pieces are cooled according to their own dynamics and develop very consistently to the highest quality.
ICECOOL will be presenting the latest SLOWPROOFER generation at IBA. SLOWPROOFING promotes the dough's own flavour over many hours in a slow and cool fermentation process. At cold above-plus temperatures, the ambient moisture is ideally generated via SOFTSTEAM mist evaporation.
SOFTSTEAM
SOFTSTEAM evaporative humidification keeps the water just above room temperature, minimising the temperature difference to the dough pieces. The evaporation basin is gently heated, which causes natural evaporation over the large surface area. This technology is gentle on the baked goods and is also highly energy-efficient. The balanced moisture ensures optimal dough consistency. The SOFTSTEAM humidification system is on top maintenance-free.
COOLPROOFER
The COOLPROOFER enables fully automated proofing and cooling processes, even through tightly stacked synthetic boards. The result is consistently long-life wheat pastries with an incomparable flavour, long-lasting crispness and a lively crust. The clever plank conditioning system utilises all the advantages of an automatic dough conditioning system and removes excess moisture with the ITRAY dehumidification function. A positive/negative pressure system ensures that the cooling phase as well as the subsequent conditioning, proofing and counter-cooling phases are carried out absolutely evenly with gently moving air through the side openings of the synthetic boards.
FRESHBAKER
The first baking process is interrupted. The products are then stored in the FRESHBAKER under defined temperature and climate conditions for several days. The baked goods can be freshly baked at any time in a second baking process. The FRESHBAKER is equipped with a sustainable cooling capacity with large-area evaporator technology and large fin spacing. The gentle cooling transport takes place via the AIRSTREAM air conduction system, which is optimally regulated by the 12’ touchscreen control. The SOFTSTEAM low-temperature evaporative humidification has an important function, as it permanently saturates the surrounding air at a cool room temperature. The BLUEAREA LED light with low energy consumption counteracts unwanted spore growth.
