On the production side, this offers new flexibility in day-to-day operations due to the time shift between dough production and baking off.
The obvious consequence is a considerable improvement in efficiency and profitability, as working hours can be shifted from the more expensive (and for employees more difficult) early mornings or nights to daytime.
Optimal bread quality is achieved through frequency-controlled air speed regulation, which means air speeds are constantly adapted to the dough’s needs – effectively preventing typical quality loss during freezing and storage.
The LILLNORD system does not operate with conventional heating elements, but with electrodes lowered directly into water.
The steam generation system consists of a heat-resistant container holding three specially prepared stainless steel electrodes.
The current passes through the water between the electrodes, rapidly boiling the water – meaning the water is heated, not the electrodes.
This allows immediate steam stop when the system is turned off, providing precise control.

All interior and exterior surfaces are made of stainless steel, with bumper rails protecting the inside walls.
The walls feature 60mm CFC-free polyurethane insulation, a high-performance material ideal for equipment operating at both positive and negative temperatures.
Includes a 2mm stainless steel floor with fully welded corners and adjustable floor heating, ensuring a consistent room climate and a dry, condensation-free floor.
