Description

One of the fastest growing products in the Bakery market are a group of pressed flat breads known by several different names. Tortilla, Wrap, Turkish Durum, Chapatti and Roti are all variations of their original flat bread however now they are pressed to form rather than sheeted. Part of the appeal of these products outside of their original ethnic origins are the versatility, convenience, and low cost to produce almost any flavor from spicy to sweet. Flavors and colors can easily be incorporated into the product. They can be filled with any type of filling from fruit to meat, and they can conveniently be hand held and eaten on the go. The primary difference press-forming yields comes from the moisture barrier created by the gelatinization of the starch on the skin. This provides excellent elasticity and a guard against fillings that would otherwise saturate the bread and leak onto the consumer.
