The systems produced by AM Technology can perform a range of treatments, including proofing, cooling and freezing. We cover the bakery, pastry, fish, meat and pasta sectors. We have recently developed and manufactured a peel board system for proofing doughs with a high water content (85%) such as pinsa, focaccia, puccia, etc. ‘Nuvola’ is the name of our new creation, and a ‘demo’ version will be exhibited at IBA 2025 in Düsseldorf.
