With the FLEX-UV PLUS storage trolley, bakers can pre-bake 80% of their entire range and then store it for several days. Thanks to the clever moisture management, the baked goods do not dry out and the integrated UV lamps prevent the formation of mold.
The entire process is controlled by innovative software that enables 200 different fan speeds. It offers PID control (Proportional, Integral, Differential), precise, regular and needs-based adjustment of relative humidity,
heat and cold as well as control of the vertical and horizontal air supply.
All this guarantees optimum climate conditions (no drying out, strengthening of the structure and development of flavors and aromas).
