Under the motto "Confectionery meets bakery - Planning. Producing. Controlling." the iba.CONFECTIONERY TEC AREA - supported by the Zentralfachschule der Deutschen Süßwarenwirtschaft e.V. (ZDS) - set itself the goal of providing information on current trends.
The focus was on ingredients, process technologies and proven best practices. In particular, the focus was on the refinement of fine baked goods and on chocolate processing technologies in fillings, glazes and decorations.
The overarching goal was to increase the added value of fine baked goods in particular.
In cooperation with partner ZDS, an area was created in Hall 9, B11, where visitors could exchange ideas with a wide range of exhibitors and find out about the latest technologies.
Exhibitors
Visitors were able to meet specialists from the confectionery industry who offered comprehensive input on the refinement of baked goods, ingredients, process technology and the processing of chocolate.
About the ZDS – The Academy of Sweets
The Zentralfachschule der Deutschen Süßwarenwirtschaft e.V. (ZDS), also known as the Academy of Sweets, is a globally recognized institution for education and training in the confectionery industry. It offers a wide range of training programs, seminars and courses covering all relevant areas of confectionery production, quality assurance and product development. Thanks to its close cooperation with companies in the confectionery and food industry and its international network of experts, the ZDS is a leading address for specialists and companies.
The ZDS consists of three main divisions
ZDS Member Services
The ZDS Member Service brings together more than 250 companies from the global confectionery and food industry. Members benefit from the use of technical facilities, support in product development and individual training and consulting services
ZDS School
The ZDS offers unique training opportunities, including programmes such as 'Food Technology Specialist', 'Confectionery Technologist' and 'Machine and Plant Operator'. There are also further training opportunities to become a state-certified food technologist or industrial foreman, either in confectionery or food technology. Vocational students live in the boarding house during the block course and are catered for in the school's own canteen.
ZDS Seminar Service
The ZDS Seminar Service enables specialists from all over the world to participate in seminars, workshops and congresses. International experts and the ZDS team impart knowledge that forms the basis for innovations in the confectionery industry.
