Zymplate Range

The Zymplates are a versatile analysis tool able to handle a lot of different enzymes contained in various samples (e.g. flour enhancers or dough). All along the bakery value chain, Zymoptiq already helps a lot of industrials players to monitor their production.

Enzymes are crucial ingredients in the bakery industry. Their roles are various since they help with lots of aspects, which overall helps enzyme users or producers save costs.

Enzymes are powerful tools to help increase and control the process of fermentation or production. They can also be a non-negligible expense in the final cost. Therefore, it is important to be able to check and monitor their activity from the production stage to the final baked product.

Many enzymatic activity measurement techniques already exist, for instance, relying on the presence of reducing sugars or monitoring sample viscosity. Zymoptiq has developed a product, the Zymplate, to measure enzymatic activity. Our technology is based on sensors containing immobilized substrate and can be used on complex samples with no to very few preparation steps. We believe that the technology we developed has the capacity to greatly simplify enzymatic activity measurement.

Zymoptiq develops and commercializes sensors for several enzymatic activities, such as amylase, β-glucanase and xylanase. For amylase activity, for instance, the Zymplate’s sensor is based on the immobilization of potato amylopectin.

After incubation with enzymatic solutions, the wells are rinsed and dried before being acquired by our dedicated reader, the Zymocube. Because data are acquired when the plate is dry, any type of solution (including colored, complex or particle-containing solutions) can be used on our sensors without filtration nor centrifugation. Experimental conditions can be adapted to the optimal activity of your enzyme in the pH range 3.0-9.0 and incubation temperature range 4-60°C.

During the data acquisition, our dedicated software performs the data analysis. Indeed, when launching acquisition, information about the well content is filled in: negative controls, calibration curve and activity level, or samples and dilution factors. Data acquisition and treatment by the software takes less than 15 min and provides you directly with sample activity values.
